Mussels a la Mariniere

So much deliciousness with so few calories, fat, or carbs. The broth is sensational, so treat yourself to a bit of bread or serve it with cauliflower rice.

Cooking Time: 27 minutes

Servings: 6

Ingredients: • 60 scrubbed mussels

• 1 tbsp. olive oil

• 8 minced garlic cloves

• 6 chopped scallions

• 1 can of chopped fire-roasted tomatoes

• 2 cups cup white wine

• 2 tbsp. butter

• Salt and pepper to taste

• 1 tbsp. heavy cream

Directions:

1. Clean the mussels thoroughly.

2. Heat the olive oil in a big pot.

3. Sauté the garlic for 2 minutes.

4. Stir in the scallions and fire-roasted tomatoes and cook on low for 5 minutes.

5. Pour in the wine and swirled the butter.

6. Season with pepper and salt.

7. Bring the liquid to a boil and boil for 10 minutes to reduce it by half.

8. Transfer the mussels to the pot and cook for 10 minutes. 9. Discard any unopened mussels.

10. Stir the heavy cream in and remove from heat.
